About this course
Introduction to cooking terminology, techniques, and theories of breakfast and the cold kitchen. Areas of study include egg cookery, breakfast preparations, salads, sandwiches, appetizers, canap�s, and hors d?oeuvres. Students will experience short order cooking through breakfast cookery. Charcuterie is explored through sausage making and p�t�s. Students will gain experience with buffet planning, execution, and presentation.
