About this course

An introduction to essential baking and pastry terminology, techniques, and skills. Fundamentals covered include bake shop equipment and product identification, recipe scaling and measuring. Techniques for the high-quality production of quick breads, yeast breads, cookies, custards, choux pastry, basic cakes, pies and tarts are covered.
